This is a site I use a lot, they list a great range of super-easy recipes and even themed meal ideas! Meat dishes, salads, vegetarian, snacks, desserts, sauces and more. They are so creative!

Fruity Pancakes and Pikelets

We make these all the time, they are so easy.

You will need:

1 c self raising flour
1 egg
1 c milk
Grated orange peel or apple peel
(you can also add a little sugar to taste)

Mix the egg into the flour - beating gently.
Slowly add the milk until the mixture is smooth.
Add the fruit peel.

Cook your pancakes or pikelets in a frying pan, medium heat.
Flip when bubbles appear in the centre.

These are great with a little butter or syrup (or both haha), or for lunchboxes!

Coconut Chilli Rice

Just for something different - try it! it's nice.

You will need:

1 cup uncooked rice
a 375ml can of coconut cream
1 chopped chilli (or a very small pinch of chilli flakes)

Cook the rice in the coconut cream (you don't need extra water)
mix in the chilli early on and let simmer until all liquid is absorbed.

Experiment with different complimentary dishes

Easy Fluffy Pudding

This is one we have been doing for years and kids love it!

All you need is 1 packet of jelly crystals and a 375ml can of evaporated milk.

Dissolve the jelly in a cup of boiling water
Let it cool and then add the evap. milk.
Whisk until fluffy
Put mixture back in the fridge until it has finished setting

Double or triple the recipe for parties etc. and make different colours

Coconut Cake

All the ingredients are in 1's. A good one to serve any visitors that come by.... and can be frozen too.

You will need:

1 c self- raising flour
1 c desiccated coconut
1 c sugar (castor if you can)
1 c milk
1 egg
1 tsp. vanilla essence

Mix dry ingredients together
Mix wet ingredients together
Fold them together

Bake at 180º C (350F) in a greased loaf pan (approx. 10 x 20cm). It will take about 45mins to cook.

Chicken and Tomato Pasta

This dish will feed a family of four, or more, if you have other things on the menu as well. It is so easy and you can keep all the ingredients in your pantry until needed

You will need:

500g dried pasta (spirals or whatever your family eats)
1 can of chopped tomatoes (whatever flavour you like - ie. with herbs or garlic)
1 - 2 tins of chopped chicken.
A little grated cheese

Cook the pasta then put into a oven/microwave proof dish.
Stir through the canned tomatoes and the chicken,
Sprinkle some grated cheese on top

Cook in oven for approx. 200ºC (390F) for 15-20 mins.

Kids love this one.

Slime and Playdough for Kids



PLAYDOUGH

You will need:
 
3 cups of flour
1 1/2 cups of salt
6tsp Cream of Tartar
3 cups of water
Food colouring

Put it all in a pot. You will need to slowly heat the mixture on  a low/med heat. Stir the whole time - it doesn't take long for the dough to start pulling away from the sides. Take it off the heat at this stage and let it cool a little. You can add food colouring at this point, you could make two or three colours even. If you store this recipe well (in an airtight container) it will last a couple of months.
There are other recipes around that don't involve cooking but they are not as good as this one.


SLIME

Easy Peezy this one.

All you need is cornflour and water (and food colouring if you like). 2 cups of cornflour will make enough for a couple of kids to play with, but you can always increase the amount to make a bulk lot.

Slowly add water to the cornflour. For 2 cups of cornflour you will need approx. 1.5 cups of water, but check the consistency as you go.

Try and store the mixture in the fridge and if the cornflour settles in the bottom just give it a stir and it should go back to slime :)

Ice-cream Slices with a twist


You will need:

Pre-purchased ice cream slices
Your favourite dessert sauce
Something that you can sprinkle (i.e. chopped nuts, chocolate shavings, coconut etc.)


Take your ice-cream slices, one at a time, and cover them in the sauce of your choice (chocolate, strawberry, passion fruit, etc.). Try and spread the sauce as evenly as possible with a knife.

Cover the saucy slices with your choice of decoration/sprinkle as listed above.

Put the slices back in the freezer laid out on a plate.

Serve when you need to!

So easy!

Soda Scones

Wow this one is easy and it only has three ingredients! Yummy too.



Soda Scones



3.5 cups self-raising flour

1 cup light cooking cream (light coconut cream would do)

1 cup soda water


Mix them all together well


Flatten mixture a little and cut into desired shapes (you could use a cookie cutter if you like)



Brush with milk if you have time


Cook for 10-12 mins at 210° (410F)
